I made root vegetable soup! Yum!
Mar. 6th, 2003 07:17 pmRoot vegetable soup is made by taking a bunch of root vegetables, washing them (that's an important step), cutting them into appropriate sides, and boiling them in water. One also uses salt and pepper.
Actually, I sauteed some of the onions and garlic first, in the soup pot, before adding the water. Other than that, it's got onions, garlic, parsnips, turnips, potatoes, and a couple carrots -- not too many, they're too sweet. I just put them in so there'd be SOMETHING in there that wasn't yellowy-white. And we didn't have scalions or leeks. It's yummy soup.

Date: 2003-03-06 07:30 pm (UTC)My sister made Green Soup last night, raiding the refrigerator produce drawer to come up with asparagus, zucchini and a few new potatoes, plus the necessary onions and garlic. Simmered in reduced (low salt, low-fat, no MSG) chicken stock till everything was soft and then whirred up with her wand blender to a lovely - and very, very green - puree . Bliss!

Just to be technical on you I think most of those ingredients
are bulbs or tubers, not roots.
