Lis has a work party/pot luck tomorrow. I cooked for it. I made fudge.

I wanted to make Kahlua fudge, but the Kahlua cookbook I found in our kitchen didn't have the fudge recipe, and I couldn't find the one that did. So I looked at the back of the tub of marshmallow fluff, which has its recipe for "Never-Fail Fudge." Their recipe calls for a cup and a half of evaporated milk, and we didn't have any. But we did have Kahlua.

So I substituted a cup and a half of Kahlua for a cup and a half of evaporated milk.

Looking at other recipes, I find that this is about three times the amount of Kahlua as is average for these recipes.

Seems to have turned out pretty well. Seems to have turned out about three times better than those versions, actually.

You know, based on those proportions, I have the sneaking suspicion that your needs might have been better served by just drinking the Kahlua.

Well, a cup-and-a-half of kahlua in five pounds of fudge. And maybe a third to half of the alcohol burned off while I was boiling the fudge together.

So, figure, oh, 12 ounces of booze in five pounds of fudge. Which, if a third of the alcohol burned off, is really the equivalent of 8 ounces of booze, or, say, five drinks.

So you'd need to eat a pound of fudge to get the equivalent of a drink of alcohol.

If someone's alergic to alcohol, or has religious strictures against consuming it, then, yes, it would be counterindicated. But I don't think a person would be likely to get drunk off of the stuff.

I know that recipe. If you can substitute any liquid for the evaporated milk, I wonder why they didn't just call for normal milk, which one is much more likely to have lying around. So my life is now easier, thank you.

Well. . . we don't know it works with any liquid -- just evaporated milk, and kahlua. It's possible that the syrupiness of kahlua is what made it work, and that anything less viscous wouldn't. Or that plain milk would scald. Or something.

Or it might work perfectly. Dunno.
