I'm a bit ignorant about phoenixes. I thought fire was the way they died. If you want to keep them, wouldn't you want a fire-proof mews? How about an ice palace? Or maybe a cave behind a waterfall...

Since there's only ever supposed to be one, the plural may not have been established.
I'd recommend sphinges (sphinxes) instead.
