My birthday dinner tonight

Because, "fish is a healthy food? HA! I can fix THAT!"
Take some flour and mix in your spicing -- salt, pepper, whatever else you want. Today, I just used the shaker of "Italian seasoning" -- a mix of various herbs that tend to go together -- oregano, marjoram, tarragon, that sort of thing. Along with the salt and pepper, of course.
I put half peanut oil and half butter in the pan, and got it nice and hot. I had previously defrosted two tilapia fillets that we buy in bulk at Costco, and I dredged them, and dropped them in the pan. Two or three minutes on a side, and serve over rice.
Real simple, real good, and frying makes sure that I don't accidentally eat a healthy meal for my birthday. Anything can be bad for you if you add enough butter and peanut oil!
For you gluten-free folks, I bet there are flour-substitutes that would work well in this for dredging. I mean, this is one of those rare cases where the gluten isn't actually the point of the flour.
