[livejournal.com profile] desperance, your idea works. My Blue Blazer recipe works with absinthe, or, at least, with Absente, which is an absinthe substitute sans wormwood. Haven't tried it with the real stuff yet, 'cause I don't have the real stuff yet, but as it's now legal and available in the US, I soon will.

Yes, the flame is blue, not green, and, oddly, the final product isn't cloudy-white, but pale green and clear. With some of the alcohol burned off, it's smoother than a usual absinthe, but the fire caramelizes the sugar, so it's really quite nice.

I think I'll call it the "Blue Fairy."

I was under the impression that the harsh bitterness in absinthe came from the wormwood itself. Could explain the mellowness if the absinthe you used wasn't the "real stuff".

Did you do the whole sugar-cube-and-ice-water thing? A friend gave me some St. George absinthe, and the sugar and water smoothed out the roughness quite a bit. My husband, who thought it tasted like Nyquil at first, thought it tasted okay after I treated it.

There is an absinthe bar in New York city already, I can't wait for the first one to show up here.

If there's a Beverages and More in your neck of the woods, they carry Absente, Kubler absinthe and Lucid absinthe.

If you don't mind buying mail order, drinkupny.com has all of the US-legal absinthes, including the hard-to-find St. George Absinthe Verte (new release tomorrow, yay!) and offers free shipping on orders over $50, I think it is.

I did end it running backwards up one of the steep hills in Swansea—they kind of built up a cliff—in heels. Yes, I was plainly blotto but, from all accounts, it was amusing to watch. .

Perhaps it's the fact that it's boiling at addition.

Does that particular variety go cloudy when water is added normally? Some don't, as disappointing as that is.
