Things to remember with cooking

I like salt a lot more than Lis does. "Enough salt" for me is "way, way too much salt" for Lis.

I grew up without salt in cooking -- my mother fed us a fairly low-sodium, largely-organic, mostly homemade diet when we were kids. Thus, when I grew up, I found that I LOVE refined sugar, white flour, and salt, and use them all far, far too heavily, I think.

Mmm. Refined sugar. . . we've got 25 pounds of it in the trunk of the car right now. . . I should go get it and eat it all. . . mmmmm . . .

My father quickly realized, after he and my mother were married and she started cooking for them, that he liked his food much saltier than she did. So, doing the rational thing, he started salting his food without first tasting it to reconfirm for the Nth time that, nope, she still didn't like as much salt as he did.

My mother, being a proper Southern lady, took great offense at this. So, one day she made a salad. With the better part of a can of Morton's in it.

My father salted the salad without tasting it. He took a bite of the salad, realized what and why my mother had done, and decided that he was going to finish that salad even if it killed him. He did, and continued to salt his food without tasting. My mother decided that surrender was the appropriate action.

My mom stopped cooking with salt when my sister was born. One of the best parts of moving out was, well, okay, not having to eat her cooking anymore, but after that, being able to cook with salt. Wow. I love salt.

Interesting how that works, isn't it? We grew up mostly saltless, also, but I still prefer much less salt than most people. Have started liking it much more now that I'm older; my taste buds are clearly shifting, and I actually use it now---sometimes quite a bit.

We were all about the white flour and sugar, though, and now I eat whole grains and turbinado sugar. Go figure.

Really makes me wonder what to do about the sprog. Though I suspect that mucking around with his current diet for the sake of future eating preferences is just plain silly.
