God willing and the river don't rise (and we kind of mean that literally), Vincent says that Think Tank ought to be opening on the 17th. Now, I'm not working that night, it being, a) a Friday night which isn't my shift, and b) Yom Kippur, but I should, if all goes as planned (and that's a big "if" at the best of times, and even more so in the restaurant business, and don't even get me STARTED on the hurricane that's on its way), be starting for lunch on Monday.
The schedule Vincent is offering me is terrific. He's offering to have me work all five weekday lunches, and to have two of those days extend into dinner hours, because, on average, dinner shifts are more lucrative than lunch shifts, so he wanted to let me have a crack at those, too.
For my part, I want to make these lunch shifts great. I mean, Vincent is giving me amazing opportunities here, and I want to do as well by him as he's doing by me. So I'd love it if those of you who work in the Kendall Square area would consider coming by us for lunch. Regularly.
I've gotten a copy of the food menu. It looks AMAZING. I mean, if I WASN'T working here, I'd be telling you to try this place out. The menu has a good selection of gluten-free, dairy-free, vegetarian, and vegan items, as well as items involving piles of cheese, meat, and wheat. The menu is largely creative, and often Asian-influenced takes on pub grub. For instance, they serve fish and chips. The batter is a tempura batter, the sauce it's served with is a yuzu aioli, and the chips are lotus root. Their BLT involves cornmeal-breaded green tomatoes -- and you can replace the (house-smoked!) bacon grilled house-smoked tofu.
I've also gotten the recipes for their cocktail menu, and I'm to a) learn them (there's a difference between MEMORIZING a drink and LEARNING it -- learning it means understanding -- knowing what it's trying to do, and how, and why, as well as how to make it) and b) think about them, and think about new things that would fit in.
