Lis told me to step up my game, so I did.

Couple nights ago, Lis let me know that the meals I was preparing were just . . . boring. We were doing the same things over and over again -- and I wasn't doing them WELL. I was merely doing them . . . edible-y. And she told me that she was really hoping for better meals, and that she trusted I could.

So I did.

Actually, it's not any harder to cook food with more flavor in it. Tonight, for instance: take chicken breasts. Smash them flat with a pot, to make cooking easier. Pour Worcestershire sauce on them and rub it in. Get a pan nice and hot with a little oil in them. Put chicken in breadcrumbs, and drop them in the pan. Fry up.

Things like Worcestershire sauce mean that you can get all the flavor you want with only one ingredient.

Yay Worcestershire sauce!

I recently made a rub with anchovy paste, salt and pepper. When seared, the coated meat didn't taste fishy ut instead intensely savory.

I hope this made sense, I have a little girl carrying on in my ear.

What I've been doing lately is to cook a big pot of something on Sunday, so we have leftovers (that I like) a day or two in the week. For instance, this past weekend it was jambalaya. Things like chili or stew work well too, and I enjoy cooking a complex dish when I have spare time much more than I enjoy scrambling to figure out what to make,and cooking it during the week.
