To avoid the dropped-friend phenomenon, I've stopped dropping people, and have just created friend filters for reading just the people whose journals I want to read. It's easier for me socially than worrying about people's potential hurt feelings.
Some people mind if you add them as "friends" without asking. Those people usually mention that in their userinfo. (If someone wants me to ask first, I usually just don't add them, because that's easier for me socially, as well.)
If you want your LJ-cut to say something other than "read more," you can add text to it like this:
<lj-cut text="this is what it'll say when it's up there"> Stuff behind the cut </lj-cut>
